Pasta Spirals with Turkey
and Spinach

Whole-wheat pasta ups the good carb content of this low-fat dinner choice, perfect for the CMWL Modified Plan.

Estimated Total Preparation Time: 25 minutes

Ingredients
12 oz whole-wheat pasta spirals
1 lb lean ground turkey breast
½ lb chopped spinach
20 oz (about 2 ½ cups) tomato sauce (store-bought)
4 tbsp grated Parmesan cheese
Salt and pepper

Preparation
Prepare pasta per the directions on the box. While the water for the pasta is coming to a boil, brown the ground turkey in a sauté pan on high heat for 6 to 8 minutes. Make certain to spread the turkey around the entire pan, breaking the turkey into small pieces and stirring to cook all sides. Season with salt and pepper.

Add spinach to the turkey and cook for 1 minute. Add tomato sauce and simmer for 2 to 3 minutes on low heat.

When pasta is done, remove from heat, drain, and place in a large bowl. Fold in turkey sauce.

To serve, scoop four equal portions into four bowls and garnish with grated cheese.
