Mushroom and Asparagus Pasta | ![]() | |||
Calories per Serving: 521 Enjoy the tastes of the season with this light and easy pasta, a wonderful addition to the CMWL Modified Plan. Plus see even more delicious recipes! | ![]() | |||
Servings: 4 Ingredients Preparation Cook pasta in a saucepan per the manufacturer's instructions. While pasta is cooking, place olive oil in sauté pan on high heat. Add asparagus and cook for 3 minutes. Add mushrooms and cook for 1 minute. Then add stock and cook for 3 minutes longer. Remove pasta from heat, strain, and place pasta in sauté pan with asparagus and mushrooms. Toss together and season with salt and pepper. To serve, place equal portions in four bowls and top with pecorino cheese. | ||||
