Pork Tenderloin and Grilled Peaches

Servings: 4
Estimated Total Preparation Time: 15 minutes + marinade

Ingredients
1 ½ lbs boneless lean pork tenderloin, all visible fat trimmed, cut into four equal portions
1 cup cola
1 cup apple juice
½ cup brown sugar
¼ cup paprika
1 tbsp ground black pepper
1 tbsp salt
1 tbsp chili powder
1 tbsp onion powder
1 tbsp garlic powder
1 bay leaf, ground
2 tbsp canola oil
½ cup barbecue sauce (your favorite brand)
2 peaches, cut in half and pit removed
1 tablespoon tarragon, chopped

Preparation

Marinade tenderloin overnight in cola and apple juice. If the level of the liquid does not cover the pork, make certain to flip the pork so all parts come in contact with cola/apple solution.

Combine all dry ingredients. Coat pork with the dry rub.

Oil grill and heat to medium. Place pork on the grill. Coat with barbecue sauce and cook for 4 to 5 minutes per side or until cooked through. While tenderloin is grilling, place peach halves cut side down on the grill. Flip after 4 minutes and grill on the round side another 3 to 4 minutes.

Remove pork and peaches from grill and place on a platter. Garnish peaches with chopped tarragon and serve.
